Choccy Cake

YUM. Even typing this up now is making my mouth water just thinking about this cake! Chocolate cake with chocolate butter icing!

For the cake
3 Eggs
55g Cocoa powder
115g Self raising flour
170g Caster sugar
170g unsalted butter
300g Icing sugar
90g Milk chocolate
90g Butter

Lets Start! Firstly mix the cocoa powder and the sugar together into a bowl and including the butter and mixing this together to form a smooth paste. Then add 1 egg and a third of the flour and mix together. Once this is mixed add another egg and another third and then repeat with the third amount also. You will know this is all mixed together when the cake mix is smooth and leaves a small peak when removing the spoon.
Then place half of the mixture into a 20cm cake tin making sure this is greasy to the cake once cooked removes easily. If you have 2 tins you can do both at the same time but I only have 1 so had to do it one after the other. Place the mixture into the oven at 180 degrees and leave to cook for around 17 minutes.
To test this is cooked you can insert a fork into the top and if when removing the fork, it appears clean this suggests the cake is cooked through. Once this is removed from the tray place the second lot of mixture into the tray and place into the oven and repeat again with the same amount of time.
Once this is done leave the cakes to cool on a cooling tray. While this is cooling you can make the butter icing.
Firstly sieve the icing sugar into a bowl and then warm up the butter so it is soft. You then have to melt the chocolate and then once this is completely melted place all the ingredients together and mix together. You want this mixture to be smooth enough to be able to pipe this easily.

I then placed the mixture into a piping bag with a star shaped nozzle (not correct name but I can’t remember the correct name!) I then pipe the mixture onto the top of one of the cakes which is going to be in the middle. Taking a flat knife, I then smooth out the mixture so it is spread evenly over the whole cake. I then place the top of the cake onto in preparation to for icing.

I then, starting in the middle, create a small circle shape and then get larger until about 3 times round in shape. I then repeat this over the whole top of the cake. Once this is done you are ready to eat!
